Viticulture:

From winter pruning to suckering in summer we try to ensure a balanced growing vine with no or minimal interference such as spraying or irrigation. Just before harvest we remove unsuitable berries and bunches, leaving only the best grapes to ripen. |
| Harvest: |
|
A long ripening season saw the grapes reach optimum ripeness. The grapes were handpicked between 24 and 25 degrees balling early in the morning while it was still cool. |
| Vinification: |
|
The grapes were destalked and 60% of the berries crushed while 40% were kept whole. The mulch was gently pressed to get as much as possible free running juice. The juice of the Viognier and Chenin Blanc was gravity fed into old 300 litre French oak barrels where it completed fermentation. The juice of the Chardonnay completed fermentation in stainless steel tanks. |
Ageing & Blending:

The Chenin Blanc and Viognier were aged separately on its wine lees for 8 months, with regular battonage. All the wine was blended 3 weeks prior to bottling and then coarse filtered. |

A well balanced, barrel matured wine delivering a ripe fruit bouquet with subtle hints of spice and a lingering, buttery aftertaste with a lengthy finish. |

This wine will develop and mature over the next 3-5 years. |

|
The characteristics of this wine will be beautifully enhanced and complemented if served well chilled with mild spicy foods such as Thai, fish or poultry dishes. |
