From winter pruning to suckering in summer we try to ensure a balanced growing vine with no or minimal interference such as spraying or irrigation. Just before harvest we remove unsuitable berries and bunches, leaving only the best grapes to ripen.

| Harvest: |
| A long cool ripening season saw the grapes reach optimum ripeness. The grapes were handpicked between 19 – 21 degrees balling early in the morning while it was still cool.

| Vinification: |
| The grapes were destalked and only 50% of the berries crushed. The mulch was gently pressed to get as much as possible free running juice. The juice was pumped into small 2000 liter stainless steel tanks where it completed fermentation

| Taste the sun in this well structured wine with tropical flavours on the nose and hints of asparagus and green fig flavours on the palate. |
| Ageing potential: | | This Sauvignon Blanc was left on its lees for 5 months with regular battonage to capture the flavours of the wine, after which it was coarse filtered. | Food Recommendation:
